Heat 1 tablespoon of clarified butter in a large covered skillet, sauté vegetables over medium heat for about 10 minutes. Take out and reserve.

Pour the remaining clarified butter into the hot skillet. Add the crushed beef and pork and brown over high heat until the ground beef is browned and a roast forms (this will take about 15 minutes). Smash the meat with a spatula so that it falls apart.

Then add the roasted vegetables, bay leaf and rinsed thyme sprigs and season with paprika and pepper.

Add the bacon rind, the tomatoes with the liquid and the wine and cook stirring until the liquid evaporates.

Pour in the broth and cook over low heat for 1.5 to 2 hours. Stir occasionally and add a little tomato juice as needed if the sauce is too thick.

Finally, add enough tomato juice to give the sauce the right consistency.

The Finishing Touch

Remove bay leaves, thyme sprigs, and bacon rind. Mix the bolognese well and add a dash of milk or cream if necessary; this will smooth and soften the sauce. Finally, season with salt, pepper and sugar.
